Soft, chewy, and incredibly easy keto peanut butter cookies made with just four ingredients. Each cookie has only 1g net carbs and all the nostalgic flavor of classic cookies.

Ingredients

  • 1 cup natural peanut butter (just peanuts and salt)
  • 1/2 cup keto-friendly sweetener (Swerve or monk fruit)
  • 1 large egg
  • 1 teaspoon sugar-free vanilla extract

Instructions

  1. Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix peanut butter, sweetener, egg, and vanilla until a smooth dough forms.
  3. Roll dough into 12 balls and place on the baking sheet about 2 inches apart.
  4. Flatten each ball with a fork to create a criss-cross pattern.
  5. Bake for 12–15 minutes until edges are light golden. Do not overbake.
  6. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra softness, add 1 tbsp softened butter to the dough. Store cookies in an airtight container at room temperature for 5 days, or refrigerate for up to 2 weeks. Freeze for up to 3 months.
